What I Eat in a Day | VEGAN Tofu Scramble Recipe

Vegan Tofu Scramble recipe:
Serves 1-2

8-10 small mushrooms, sliced
1/4 cup finely chopped onions
handful cherry tomatoes
1 tsp fresh chives, chopped
1/4 block firm tofu
1/4 tsp sea salt + more to taste if desired
1/4 tsp turmeric
1/4 tsp black pepper
1 piece tempeh bacon, chopped (optional)
nutritional yeast, ketchup, and hot sauce for topping

In a non-stick frying pan set medium high heat, add mushrooms and let sit for 1-2 minutes. Add onions and 3-4 tbsp water to the pan. Using a wooden spoon, stir mushrooms and onions and lightly scrape the bottom of the pan to deglaze the pan and flavor the veggies. A pinch of salt and pepper can be added at this step.

Crumble in tofu and add salt, turmeric, and black pepper. Stir to mix and cook until warmed through, about 3-4 minutes. Stir in chopped tomatoes and fresh chives. Taste and add salt and pepper as desired.

I like crumbling in 1 piece of tempeh bacon and sprinkling on some nutritional yeast! Adds SO much flavor and extra protein 🙂

1 can black beans, rinsed and drained
3 heaped tbsp pico de gallo salsa
splash of water
