Vegan Chinese Spicy Eggplant (Oil-Free) Recipe in Less than 10 Minutes

Start to finish in less than 10 minutes! Spicy eggplant is a popular dish in both Chinese and Thai cuisine. While there are many recipes online, this one differs because it is oil-free, cholesterol-free, very low in fat (The only fat is that naturally occurring in the ingredients.), vegetarian and completely vegan.

1 lb small eggplants cut into wedges
1 medium onion, julienne sliced
1 medium red bell pepper, seeded and cut into large squares
1 Tbsp ginger garlic paste (or fresh)
2 Tbsp rice vinegar or lemon/lime juice
3 Tbsp soy sauce
2 Tbsp brown sugar
handful fresh basil leaves, julienne sliced
Crushed red pepper or hot sauce to taste
