Pumpkin Gnocchi Kale Soup Recipe | August Cooking | Vegetarian Recipe | Easy Homemade Soup | Mediterranean style diet

In this video I show you how to make Pumpkin Gnocchi Kale Soup, a delicious vegetarian soup. Drop the feta and it is a great vegan soup recipe. Gnocchi soup usually has chicken or sausage in it, I use kidney beans as a great protein source and meat substitute. This is very easy and packs a ton of flavor. The combination of beans and gnocchi make it a very hearty meal that will keep you warm despite cold days. Thanks for watching.



½ onion

½ cup roasted red peppers

2 T minced garlic

1 T Italian seasoning

½ T salt and pepper each

1 can red kidney beans (drained and rinsed)

4 cups vegetable broth

4 cups of water

5 cups of kale

1 lb. pumpkin gnocchi or potato

Feta Cheese


On medium heat add 1 T EVOO. Heat onions till soft. Add peppers, garlic, and herbs. Follow with the beans. Add your broth and water. Heat to boil and simmer for 15 minutes. Add kale and simmer for 10 -15 minutes. Add gnocchi and cook for 3 -5 minutes or until the gnocchi float. Bowl up and garnish with some feta cheese. Salt and pepper to taste.

  • That looks lovely, I'm making hot and sour Mixed seafood broth tonight and was wondering whether Gnocchi would be OK added to it, since seeing your video I've decided to go with it, it looked lovely in your soup so dont see any reason why it wont work in mine. Not using the whole pack so will put it in your soup when i make it. Have a nice day.
