Enchiladas | Cook with Me!| Vegetarian Recipes

I sort of combined several recipes that I’ve come across over the years, and the flavor combination ended up winning me over. There are endless possibilities with this recipe. You could use regular flour tortillas and do rolled enchiladas in a larger pan, or you can make flat ones like I did here.
Fun fact: This recipe tastes exactly the same if you just pop the pan in the microwave to melt the cheese instead of turning your oven on!
Like I mentioned, sweet potatoes are definitely better than butternut squash, but it wasn’t bad!
