👉VEGAN CHICKPEA PASTA SAUCE

You might have guesses it already when watching the video; this sauce is actually a very simple hummus recipe. I have featured it on Pure Power Panda earlier this year. It is by the creative cooking blog Minimalist Baker (http://minimalistbaker.com/). I figured, since I love it so much with any type of bread, why not enjoy it together with pasta? I think this combo is beyond delicious!

Ingredients for the Chickpea Pasta Sauce

(know as the 5 Minute Microwave Hummus by the Minimalist Baker)
1 15 ounce can chickpeas, not drained
2 to 4 garlic cloves
1/2 cup tahini
2 tbsp. fresh lemon juice
3/4 to 1 tsp. salt
1 to 2 tbsp. olive oil

Instructions

Microwave undrained chickpeas and whole garlic cloves in a mixing bowl for 4-5 minutes. Add to blender or food processor and process with lemon juice, salt and tahini. Stream in olive oil while mixing. Process until smooth and creamy, scraping down sides as needed. Taste and adjust seasonings as you prefer. Add to the freshly cooked pasta.

👉VEGAN MAC N’ CHEESE

This one is my original recipe. I had a hard time finding a delicious tasting mac n’ cheese dupe, so I went ahead a created my own. It’s secret ingredient is definitely the nutritional yeast as it provides the dish with an almost cheese-like flavor.

Ingredients for the Pure Power Panda Vegan Mac n’ Cheese

500 grams / 18 oz / 1.1 lb macaroni
1 large sweet potato (about 400 grams/ 14 oz / 0.88 lb)
3 tbsp. nutritional yeast
250 ml / 1 cup soy cream for cooking
3 garlic cloves
1 tsp. salt
1/2 tsp. pepper
1 tsp. cayenne pepper
1 tsp. thyme

Directions

Cook the macaroni according to the instructions on the package.

Depending on your taste, you can either peel the sweet potato or leave the peel on. I left mine on, because I find it adds that special something to the flavor. Either boil the sweet potato in hot water until soft, or simply steam it in a food steamer if you have one. I cut mine into larger chunks before steaming so it took only a couple of minutes until it was soft. I also added the garlic cloves to the steamer to soften them up but this is of course optional.

Whilst the macaroni are cooking, put all the ingredients into a blender or food processor and blend until you have reached a creamy consistency.

Drain the pasta, put them back in the pot and add the vegan mac n’ cheese sauce. Heat everything over low heat a minute or two and you are done!

Ingredients for the VEGAN PARMESAN CHEESE

(recipe by the Minimalist Baker)

3 tbsp. nutritional yeast
3/4 cup cashews
1/4 tsp. garlic powder
3/4 tsp salt

Directions

Blend everything in a blender or food processor at once until all ingredients are fine. This mixture can be stored in the fridge for several days. By the way, it tastes great on fresh veggies like broccoli and zucchini too!

👉VEGAN AVOCADO & SPINACH PASTA SAUCE

Avocados are a great base for any pasta sauce thanks to their creamy texture. This recipe is a quick, yet truly delicious combo, than is even suitable for hot summer days when eaten cold. I recommend adding the freshly prepared sauce to the still steaming pasta. This way you don’t really need to heat it up.

Ingredients for the Avocado & Spinach Pasta Sauce

1 ripe avocado
2-3 garlic cloves
1 diced onion
1/2 cup soy cream for cooking
1 cup fresh spinach
2 tbsp. lemon juice
salt and pepper to taste

Directions

Add all ingredients listed above to your blender and mix until creamy and smooth. Add the sauce to the freshly boiled pasta. I recommend adding sauteed grape tomatoes.
