Sichuan Spicy Chicken Leg Salad (Chinese Cooking Recipe)

Welcome to Chinese Cooking. My name is Xiao Wei and my goal is to make your kitchen simple and exciting. Ever since my Mother showed me how to cook at an early age, I have always had a strong passion for Cooking. My family still live in Inner Mongolia in the northern part of China, where I visit each year and pick-up new Chinese recipes.

6 (600g) Chicken Legs
10g Ginger
15 Ice Cubes
150g Cucumber
4 Tbsp Chilli Oil
2 Tbsp Sugar
2 Tbsp White Vinegar
2 Tbsp Light Soy Sauce
2 Tbsp Sichuan Peppercorns
1 Tbsp Cooking Wine
2 Tbsp Sesame Seeds
50g Roasted Plain Peanuts
1 Tbsp Chilli Flakes
2 Spring Onions
Salt to Taste

1. Finely chop the spring onions & half of the ginger
2. Thinly slice the other half of ginger
3. Cut the cucumber into bite size chunks
4. Place 10 ice cubes in a mixing bowl & add 1 litre of cold water
5. Place the remaining ice cubes into a large bowl, add the sliced ginger & add 200ml of cold water
6. Remove fat from under the skin of chicken legs. Then place in a steamer, Steam for 20 minutes
7. Heat 1 Tbsp oil in a wok, add the Sichuan peppercorns & fry for 5 minutes.
8. Place the chicken legs in the ice water & leave until completely cool
9. Meanwhile make the dressing… Place the cucumber, chilli oil, sugar, vinegar, soy sauce & cooking wine into a mixing bowl
10. Add the fried sichuan peppercorns, sesame seeds, peanuts, chilli flakes, spring onions, add all the ginger & salt, then mix the ingredients together
11. Chop the chicken legs into bite size chunks and place onto a dish, pour the dressing over & enjoy
