Eggless Banana Muffins | Quick And Easy To Make Muffin Recipe | Kanak’s Kitchen
Learn how to make Eggless Banana Muffins, an easy and delicious recipe by chef Kanak.
These muffins are very light, soft and moist in texture and are egg free. They have perfect sweetness from sugar and banana and if you have a sweet tooth, then this is just the right recipe for you.
1 cup all purpose flour
3/4 – 1 cup sugar
1 big ripe banana
1/2 tsp baking powder
1/2 tsp baking soda
1/2 tsp vanilla essence
1/4 cup oil / melted butter
1/2 cup milk
2 tsp lemon juice
2 -3 tbsp cashewnuts / walnuts – chopped
1 tsp brown sugar
pinch of salt
1/8 tsp cinnamon powder
– Pre heat the oven at 190 Degrees Celsius.
– Peel off the banana and mash it completely in a bowl using a fork.
– Add oil, vanilla essence an lemon juice and mix well.
– Add the powdered sugar and mix well.
– Beat the ingredients well until the sugar is dissolved, using a blender.
– Sieve the all purpose flour, baking powder, baking soda, salt and cinnamon powder into the banana mixture.
– Using a spatula, fold the flour completely. Keep folding and add milk in order to blend everything together.
– Beat it slightly using a hand blender.
– Add the copped nuts to the banana mixture.
– Fill the silicon moulds upto 3/4th portion with the banana mixture. Sprinkle some nuts and brown sugar over it.
– Put the tray in the oven and bake these at 180 degrees Celsius for about 18 – 20 minutes.
– The delicious and healthy banana muffins are ready to be served.
