Homemade Southern Macaroni & Cheese | Side Dish Recipe

1lb elbow pasta
2 cups cheddar cheese
1 cup mozzarella
2 1/2 to 3 cups of milk
tsp cajun seasoning
salt and pepper to taste
First, get a pot of salted water boiling for pasta.
Second, melt butter in saucepan and add flour then cook together for about 30 seconds to a minute to get the raw flour cooked.
Then, slowly add milk and continue to whisk and add seasoning and salt and pepper.
Next simmer until turns into a thick sauce.
Finally turn off the heat and add cheese and let it melt.
Once you add the cheese to the sauce, make sure you have your pasta boiling and cook according to box instructions.
When your cheese has melted and pasta is cooked, combine both together.
You can serve immediately as is, or put in baking dish, add breadcrumbs to the top and bake at 350 for 20 minutes.
