  • Hi! First of this looks delicious !! But I just wanted to add that if you are not a big fan of ricotta (as I am) you might want to make a creamy béchamel, it's more traditionnal and doesn't gets dry in the oven, which is great, so for it you'll need :

    ¼ cup cornstarch
    2 pinches
    nutmeg (or mace)
    2 pinches
    black pepper
    ¼ tsp salt
    2¼ cup
    non-dairy milk (I'd suggest soy milk or almond milk because these are not sugary as other non-dairy milks)
    1 tbsp vegan butter (optional)

    So, just place a saucepan over a medium heat and tip in the dry ingredients, followed by the milk. Whisk the ingredients to properly disperse the starch, swap the whisk for a spatula and start stirring the ingredients.
    As soon as the milk is warm, you can add in the vegan butter and keep stirring to dissolve it. Stir constantly until the sauce thickens and reaches boiling point, and then turn off the heat. Let the sauce cool down completely before using it.

    By the way this is recipe is form the lasagnas by the vegan corner, and it tastes exactly like the non- vegan version, so this is basically amazing,
