Let your tastebuds have a roll with these smart & easy appetizer- Palak Paneer Rolls!
Palak Paneer Rolls
Paneer 1 cup – cubed
Spinach (Palak) – Boiled and pureed – 1 cup
Curd – 1 cup mixed with water
Cumin Seeds – 1 tsp
Onions – sliced – 1 cup
Chopped garlic – ½ cup
Coriander paste – 1 tbsp
Turmeric powder – 1 tsp
Coriander powder – 1 tsp
Red chilli powder – 1 tsp
Spinach (palak) leaves – 10 large leaves
Cheese mix (Grated mozzarella and processed cheese) – 1 cup
Salt- to taste
Black salt – 1/2 tsp
Oil – to cook
Ghee- 1 tbsp.
Fresh cream – 1 tbsp
Red chilli powder- 1 tsp
Onion rings- 5-6
Lemon wedges- 1-2
Blanch spinach (palak) leaves till soft and malleable, dip them in ice cold water (to prevent
further cooking and colour change) and keep it aside.
In a pan, heat oil, add cumin seeds and let it sputter.
To this add sliced onions and let it turn golden brown. Add garlicand sauté.
To this add the curd and water mixture.
Add turmeric powder, red chilli powder, coriander powder and black salt.
Cook till it all comes together.
Add the palak puree, and the coriander paste. Add the paneer (cubed) and cook it together.
Add salt and squeeze some lemon juice.
Now once the mixture is ready, cool it (This palak paneer needs to be of a thick consistency).
Add the cheese mix in the palak paneer mixture.
In the blanched leaves, add this mixture and roll it together.
Heat ghee in a pan and sear the rolled rolls.
Garnish with fresh cream and red chilli powder on top.
Serve with onion rings and lemon wedges.
