ASPARAGUS IN BLANKETS
Makes 12 Appetizers
4 Asparagus Spears, uncooked, trimmed and sliced in thirds
6 Slices of Swiss Cheese, cut in half
4 Slices of Black Forrest Ham, sliced in thirds (4″ x 2″ strips)
1 Sheet of Puff Pastry
1 egg, lightly beaten
1 cup of honey mustard (store bought is fine OR add 1-2 tbsp of honey to 1 cup of Dijon mustard)
Preheat oven to 400F degrees.
Roll of puff pastry onto floured surface. Cut into 4″ x 2 ” strips. Lightly brush short sided ends with egg wash.
Roll cheese around asparagus, if using then roll ham. Place onto puff pastry and roll entire thing up in it. Make sure seams are sealed, place on a parchment lined cookie sheet.
Bake at 400F degrees for 12-15 mins until pastry is nicely browned and puffed up.
Serve warm with honey mustard. Enjoy!
